VIV’S PEPPER JELLY ROASTED SALMON


Ingredients
4 – 6 skinless 4 oz salmon fillets
Salt
Black pepper
Juice of 1 small lime
½ cup Viv’s Pepper Jelly
2 tbsp olive oil, garlic infused if possible
Directions
- Season the salmon with generous pinches of salt black pepper and lime juice. Let marinate for half hour.
- Preheat oven or broiler to 375 degrees F.
- Place the jelly in a microwave safe bowl and heat in the microwave for 15 – 20 seconds. The jelly should be liquid. Mix in the olive oil and shadon beni.
- Place the salmon on a broiler rack lightly sprayed with cooking spray. Brush the jelly mixture onto the salmon. You can also use a spoon and evenly spread the mixture onto the salmon.
- Bake in preheated oven or broiler for 12 – 15 minutes depending on the thickness of the salmon. Remove and serve.
