VIV’S PEPPER JELLY ROASTED SALMON

Ingredients

4 – 6 skinless 4 oz salmon fillets

Salt

Black pepper

Juice of 1 small lime

½ cup Viv’s Pepper Jelly

2 tbsp olive oil, garlic infused if possible

Directions

  1. Season the salmon with generous pinches of salt black pepper and lime juice. Let marinate for half hour.
  2. Preheat oven or broiler to 375 degrees F.
  3. Place the jelly in a microwave safe bowl and heat in the microwave for 15 – 20 seconds. The jelly should be liquid. Mix in the olive oil and shadon beni.
  4. Place the salmon on a broiler rack lightly sprayed with cooking spray. Brush the jelly mixture onto the salmon. You can also use a spoon and evenly spread the mixture onto the salmon.
  5. Bake in preheated oven or broiler for 12 – 15 minutes depending on the thickness of the salmon. Remove and serve.
