ZOODLES (ZUCCHINI PASTA) – Fitness Chef Charlene Procope-Delph

From the Fitness Chef Charlene Procope on Cup of Joe Caribbean

Ingredients

3 lg zucchini
1 lg bell pepper green or red
2 cloves garlic minced
1/4 cup Parmesan cheese
1/4 tsp garlic salt
Red pepper flakes
1tbsp coconut or olive oil

Directions

  1. With a potato peeler, peel zucchini leaving skin on, slice bell peppers and set aside.
  2. Add oil to a sauté pan, when heated add garlic, then peppers and zucchini last.
  3. Add remaining ingredients and sauté for a few min until cooked.
  4. Top with extra Parmesan cheese if desired. Serve.
