1 pack of bow tie pasta, cooked

½ cup Regal Pumpkin Seeds

¾ cup Regal Sliced Almonds

¾ cup of Regal Pecans, chopped

1 cup of Corn kernels

1 cup of diced tomatoes

1 cup of black beans

1 teaspoon salt

½ teaspoon black pepper


2 tsp White wine vinegar

1 tbsp Honey

1½ tsp Mustard

2 garlic cloves, minced

½ cup olive oil

Salt and Pepper to taste


  1. In a large bowl add boiled pasta and set aside.
  2. Heat a frying pan and toss together pumpkin seeds, almonds and pecans. Season with salt and pepper. Roast nuts for about 2 to 3 minutes and set aside.
  3. To the pasta, add corn, tomatoes, black beans, salt and pepper and mix together. hen add toasted nut mixture and fold in with pasta.
  4. Make the Vinaigrette - In a measuring cup, add white wine vinegar, honey, olive oil, mustard, garlic, salt and pepper and whisk until combined.
  5. Pour in vinaigrette and mix everything together and serve chilled.
