NUTTY PASTA SALAD

Ingredients
1 pack of bow tie pasta, cooked
½ cup Regal Pumpkin Seeds
¾ cup Regal Sliced Almonds
¾ cup of Regal Pecans, chopped
1 cup of Corn kernels
1 cup of diced tomatoes
1 cup of black beans
1 teaspoon salt
½ teaspoon black pepper
Vinaigrette:
2 tsp White wine vinegar
1 tbsp Honey
1½ tsp Mustard
2 garlic cloves, minced
½ cup olive oil
Salt and Pepper to taste
Directions
- In a large bowl add boiled pasta and set aside.
- Heat a frying pan and toss together pumpkin seeds, almonds and pecans. Season with salt and pepper. Roast nuts for about 2 to 3 minutes and set aside.
- To the pasta, add corn, tomatoes, black beans, salt and pepper and mix together. hen add toasted nut mixture and fold in with pasta.
- Make the Vinaigrette - In a measuring cup, add white wine vinegar, honey, olive oil, mustard, garlic, salt and pepper and whisk until combined.
- Pour in vinaigrette and mix everything together and serve chilled.
