EASY COCONUT CUPCAKES

Ingredients

1 box Betty Crocker Party Rainbow Chip Cake Mix

3 eggs

½ cup oil

1 cup water

1 tbsp coconut essence

1 tub Betty Crocker Frosting ( Vanilla)

Sweetened coconut flakes

Rainbow sprinkles or colored sugar  

Directions

  1. Preheat oven to 350 degrees F. Place the cupcake holders in the muffin pans.
  2. Place the Betty Crocker Cake Mix, eggs, oil and water in the bowl of an electric mixer. Add the coconut essence. Mix according to directions.
  3. Place the batter in the cupcake liners filling about 2/3 full.
  4. Bake in the preheated oven about 20 – 25 minutes. Remove and place cupcakes on a cooling rack. Let cool.
  5. When the cupcakes have cooled, ice with the Betty Crocker Frosting. Sprinkle with the coconut flakes and some sprinkles. Serve and enjoy.
