FRUITCAKE COOKIES

Ingredients
¾ cup Regal Raisins
½ cup Regal Dried Cranberries
½ cup chopped Regal Walnuts or Pecans
2 tbsp rum, optional
6 oz butter or margarine
½ cup sugar
1 egg
1 tsp vanilla essence
1½ cups all purpose flour
½ tsp baking soda
½ tsp salt
Glaze
1 cup Regal Icing Sugar
2 – 3 tbsps milk
Directions
- Mix together the Regal Raisins and Cranberries. Add the rum if using and let sit for ½ hour.
- Preheat oven to 350 degrees F. Lightly spray a non-stick baking sheet with cooking spray.
- Cream together the butter and sugar with an electric mixer just until light and fluffy. Beat in the egg and the vanilla essence.
- Add in the fruit, with the flour, salt and baking soda. Mix well.
- Using a spoon, drop equal spoonfuls onto the prepared baking sheet. Bake in preheated oven for 12 – 14 minutes. Remove and place on a cooling rack.
- Mix together the Regal Icing Sugar and the milk, adding just enough milk to make a thick but flowing glaze. Drizzle over the cookies, let set for 5 minutes and serve.
