Oatmeal Pone – Fitness Chef Charlene Procope-Delph

Ingredients

3 cups oats
1 cup raisins
¼  cup cranberries
¼  cup coconut flakes
2 tsp baking powder
¼  tsp nutmeg
¼  tsp cinnamon
2 cups pumpkin puree
1 egg
2 tbsp coconut oil
1 tbsp vanilla essence
¼  cup chopped nuts for the top
½  cup almond milk

Pumpkin
Simmer sliced pumpkin in water with cinnamon until soft and mash. Let cool.
Topping
¼  cup slivered almonds
¼ cup chocolate chips

Directions

  1. Mix all dry ingredients together
  2. Add wet ingredients . Mix until just combined. Spread mixture evenly in a lightly greased baking tray.
  3. Bake in a preheated 350 degree F oven for 30 – 35 minutes. The pone will have a gooey texture.
  4. Let cool and cut into serving pieces.
