SHRIMP & PINEAPPLE CHOW – Kees Dieffenthaller

Kees Dieffenthaller joins host Joel Villafana in the Cup of Joe kitchen to make a Shrimp and Pineapple Chow.

Ingredients

1 lb large shrimp, peeled, deveined and rinsed

Salt and pepper

½ fresh pineapple, peeled and cut into chunks

1 large cucumber, peeled, seeded and diced

3 – 4 blades shadon beni, finely minced

4 – 5 cloves garlic, minced

1 tsp salt

1 tsp ground black pepper

1 small scotch bonnet pepper, chopped (seeds removed)

1 tsp sugar

Juice of 1 -2 lime

Directions

  1. In a large saucepan, place some water to boil. Season the shrimp with a little salt and black pepper. Have a bowl of cold water with ice at the side. When the water comes to a boil add the shrimp in batches if necessary. Let cook just for 1 – 2 mins or just until they turn opaque. Remove immediately and plunge into the cold bowl of water. Drain. Set aside.
  2. In a large bowl add the shrimp. Add the pineapple and cucumbers Mix well.
  3. Add the scotch bonnet peppers.
  4. Add the shadon beni, garlic, salt, pepper, sugar and lime juice. Stir well. Taste and adjust seasoning if necessary. Set aside in the refrigerator for about 10 minutes before serving.
