1½ cups all purpose flour

1 cup Regal Cornmeal

3 tsp Regal Baking Powder

½ tsp Regal Baking Soda

1 tsp sugar

¼ tsp salt

1½ cups milk

2 eggs

3 tbsp oil

For the meat:

½ lb minced meat, seasoned with salt, pepper, green seasoning, garlic, all purpose seasoning)

2 – 3 pimento peppers, seeded and chopped

Few dashes Worcestershire sauce

½ cup chopped olives

½ cup  Regal Raisins

¼ cup capers

Condiment – chow chow


  1. Sift together the flour, Regal Cornmeal, baking powder, baking soda, salt. Add the sugar and mix into the dry ingredients.
  2. In a separate bowl, beat the eggs with a whisk. Add the milk, oil and mix until well combined.
  3. Add the dry ingredients in approximately three parts, mix well after each addition.
  4. Make the meat mixture.
    Heat a little vegetable oil in a frying pan over medium high heat. Add the seasoned minced meat and cook for 1 – 2 minutes. Add the pimento peppers and Worcestershire sauce. Add the olives, capers, raisins and mix into the meat. Let cook until the meat is cooked through. Taste and adjust seasoning if necessary. Remove from heat.
  5. Heat approximately 2 tbsp oil in a frying pan over medium heat. Drop 2 – 3 separate large spoonfuls of batter into the pan, depending on the size of the pan. Sprinkle a little of the meat mixture evenly over the batter.
  6. After a short while, bubbles will appear on the surface of the pancake. Turn over on the
    other side and finish cooking. Remove from pan.

  7. Repeat with remaining batter and serve warm with butter and chow chow on the side.
