1 egg

3 tbsp Viv’s Pepper Jelly

1 tbsp sugar                                         

3 tsp baking powder

3 tbsp oil

¾ cup milk

1¼ cups flour

3 tsp baking powder

¼ tsp salt

Oil for frying


  1. In a bowl, lightly beat egg. Add sugar and oil and beat well. Add the pepper jelly and whisk until well blended. Add milk and stir to combine.
  2. Sift together flour, baking powder, salt. Add to milk mixture and stir until well combined.
  3. In a frying pan over medium temperature, heat oil. Drop a spoonful of batter into pan.
  4. After a few seconds, you should see bubbles forming on the surface of the pancake. When this occurs, the pancake is ready to be turned. Flip the pancake with a spatula and let cook on the other side.
  5. Remove from pan when cooked through and repeat with remaining batter. Serve warm with your topping of choice.
