PEPPER JELLY PANCAKES

Ingredients
1 egg
3 tbsp Viv’s Pepper Jelly
1 tbsp sugar
3 tsp baking powder
3 tbsp oil
¾ cup milk
1¼ cups flour
3 tsp baking powder
¼ tsp salt
Oil for frying
Directions
- In a bowl, lightly beat egg. Add sugar and oil and beat well. Add the pepper jelly and whisk until well blended. Add milk and stir to combine.
- Sift together flour, baking powder, salt. Add to milk mixture and stir until well combined.
- In a frying pan over medium temperature, heat oil. Drop a spoonful of batter into pan.
- After a few seconds, you should see bubbles forming on the surface of the pancake. When this occurs, the pancake is ready to be turned. Flip the pancake with a spatula and let cook on the other side.
- Remove from pan when cooked through and repeat with remaining batter. Serve warm with your topping of choice.
