SALMON ‘MEATBALLS’

Ingredients
2 4 – 6 oz skinless salmon fillets
½ medium onion, diced
1 tsp green seasoning
3 garlic cloves, chopped
½ tsp salt
½ tsp black pepper
½ tsp paprika
½ cup panko breadcrumbs
1 Egg, lightly beaten
Juice of 1 lime
Directions
- Cut the salmon fillets into 1 – inch chunks.
- Place the salmon in a food processor along with the onion, green seasoning, paprika, garlic, green seasoning, salt and black pepper. Pulse together until the salmon mixture is minced.
- Remove and place in a bowl. Add the lime juice, breadcrumbs and egg. Mix until everything is blended.
- Preheat oven to 350 degrees F. Lightly spray a baking sheet with cooking spray or lightly grease with butter.
- Form the salmon mixture into even sized meatballs and place them on the prepared baking sheet.
- Bake in preheated oven for 15 minutes. Remove and serve with a creamy dip.
